This is Hallowe'en! (almost)
Despite being sick all day yesterday Libby roused herself to carve pumpkins in the evening.
Can you see what mine is supposed to be? To me it was pretty clear, but Todd couldn't see it at all.
This morning after my 8:30am class I decided to engage in some stress-relief baking. These pumpkin bars are fabulous, and I don't even like the taste of pumpkin. (recipe below)
I asked a friend for the recipe last week and not only did she bring over the recipe, but a whole batch of prepared pumpkin bars. Now that's a friend ;) I promptly ate them all and then figured I should make some more - just to be fair to the rest of the family you understand. Todd declares that if I keep managing my stress by baking we are all going to be in dire straits by the time I graduate.
In other news:
- My "housekeeping service" comes today and not a minute too soon!
- We finally set about getting a quote for finishing our hardwood floors, a project I started way back in August. It became obvious that it was not going to happen anytime soon if left up to me.
- Tonight I go to listen to Joyce Carol Oates speak. Having never read any of her books I have no idea whether this is a good thing or not.
Pumpkin bars
Bake 350 25-30 minutes 11x16 pan
Mix together:
4 eggs
2 cups sugar
1 cup oil
1 15oz can pumpkin
Add:
2 cups flour
2 tsp baking powder
1 tsp baking soda
1/2 tsp salt
2 tsp cinnamon
1/2 tsp cloves
1/2 tsp nutmeg
Frosting:
3 oz cream cheese
1/2 cup butter
2 cups powdered sugar
2 tsp vanilla extract
(The frosting recipe really needs to be doubled.)

Yum. I'm definitely making these for Thanksgiving. They look divine. I've decided 'divine' is my new word, even if it makes me sound like a 52-year-old Southern Belle sitting on her veranda sipping mint juleps. I figure I should use something other than 'awesome' every once in a while.

While the vampire pumpkin looks splendid....the correlated use of "fabulous" and "pumpkin" in the same sentence is a disservice to the english language... :-)

Great pumpkins! I make pumpkin bread last week (just before I went into labour), but I might try your recipe next. I just have to figure out how I am going to get down to Waitrose to buy pumpkin since I can't find it anywhere.
Let us know what you think of Joyce Carol Oates. I have read quite a few of her books. She seems to be quite an interesting woman. I enjoyed most of her books I have read, but a couple just seemed a waste of time.

They are so easy to make, and so tasty! I highly recommend them.
You could also say "Why, I do declare!" as well as "divine". They go together quite well :)

Unfortunately, no. I better person than me would have. :) As it is, they will end up on the compost pile. Well, they would if I had one. They will actually end up in a landfill I expect.

Oh, I totally blew off the Joyce Carol Oates thing. My bad. I got out of class and started feeling crummy, thinking maybe I was coming down as the same thing as Libby. Todd picked me up to grab a bite to eat before he went with me to hear her speak. I sat there feeling sick and stressing about an English exam I have tomorrow morning that I need to study for and thought I'd skip.
